HIGH PROTEIN PINEAPPLE FRIED RICE

Recipe

Ingredients
1 tbsp cooking olive oil
1 tsp chopped garlic
1 tsp chopped ginger
1 tbsp chopped onion
1 tsp chopped chilli
1 cup diced assorted bell peppers
1 cup green mung sprouts
75 grams chicken breast, cut into strips (veg option - replace with tofu or paneer)
75 grams of cleaned and deveined prawns (veg option - replace with soy chunks or broccoli)
1/2 cup diced pineapple
1 tsp oyster sauce
1 tsp low sodium soy sauce
Salt, black pepper powder and sugar to taste
30 grams of cooked rice, ideally one day old
Chopped coriander for garnish

Method
1. Heat the oil and add in ginger, garlic, onion and chilli.
2. Once that starts turning golden brown, add in bell peppers and sprouts.
3. Make some space in the centre of the pan and cook the protein - chicken and prawn or tofu and soy chunks.
4. Add in the pineapple and mix well.
5. Add the sauce, seasoning and rice.
6. Mix it all gently together and top with chopped coriander.
7. Serve hot!
